PAM’S SWEET POTATO PROTEIN MUFFINS
Set oven temperature to 350 degrees Fahrenheit.
Blend the following with a hand blender (not a typical hand mixer used for cakes, but a hand blender):

Blend the following with a hand blender (not a typical hand mixer used for cakes, but a hand blender):

24 oz cooked sweet potatoes (about 3 large sweet potatoes)
10 egg whites
1 cup lowfat cottage cheese
1 tsp vanilla extract
6 packets of Splenda (or sweetener of choice)
Blend until all the clumps of cottage cheese are gone then add:
5 scoops vanilla whey protein powder
1 cup uncooked oats
1 tsp. baking powder
1 tsp. cinnamon
Blend until smooth. Spray muffin tin with cooking spray. Spoon into large muffin tin. Should make 9 large muffins.
Bake for 30 minutes at 350 degrees Fahrenheit. (Keep in mind that I made this at 6400 feet above sea level, so you may have to make modifications at lower altitudes.)

OATMEAL EGGWHITE PAMCAKES
1 cup uncooked oatmeal
6 egg whites
1/3 cup cottage cheese
1/2 tsp cinnamon
1/2 tsp vanilla extract
4 stevia packets
Blend all ingredients with hand blender (wand with the blade on one end) until smooth. Use nonstick cooking spray in medium frying pan. Cook one large pancake on medium heat for 4 – 5 minutes (it helps to put a lid or aluminum foil over pan while cooking 1st side), flip and cook for 2 more minutes.
